Baconaise ( gluten free Paleo and keto)


I didn't think you could do much better than mayonnaise with garlic or sweet chilli... I was ignorant.


Ingredients:


•3/4 cup bacon fat,

• 3/4 cup Olive oil

•2 egg yolks

•1 tablespoon Dijon mustard

•1 tablespoon water,

•lemon juice to tastesalt

• 1/2 tsp pepper

• 1/2 tsp salt

• 1/2 tsp paprika (optional)

•4 - 6 strips streaky bacons ( to taste - it depends how much actual crumbly bacon bits you want )



Method

  1. Combine, egg yolks, dijon mustard, water, lemon juice and seasonings to food processor and mix.

  2. Mix your olive oil and bacon fat (melted) and add into the food processor (preferably slowly while it's running. Make sure to scrape down the sides and be sure it gets thoroughly mixed.

  3. Adjust consistency with needed water to thin down or regular mayonnaise to thicken if needed.

  4. Stir in your crumbled bacon pieces
