So my American Baeheart has been consistently at me about getting some sort of southern style biscuits... These aren't quite the right texture but As far as texture goes they're super nice and flavouring super tasty for a keto style of biscuit.
165g / 1.5cups of ground almonds
A couple twists of the salt grinder
1tbsp of baking powder
1tbsp of chives
1tbsp of ground garlic
57g / 4tbsp of melted butter
121g / 0.5 cups of sour cream
60g / 0.5 cups of cheddar
Preheat oven to 225c / 450F
Mix the eggs, sour cream, melted butter, chives, garlic and salt in a bowl -whisk until a smooth batter is achieved
Mix the ground almonds and baking powder into your batter, it will become much thicker once thoroughly mixed add in your cheddar and mix through.
Grab a Muffin tin and grease it - alternatively use silicon bun cases - you can get them super cheap and reuse them again and again!!
Divide them up into 9 cases - 12 if you want a thinner biscuit than Ive made. - they do rise up after you've finished cooking them
Cook for about 13minutes or until golden brown - a good way to test this is to prick it with a toothpick and see if it comes out clean.
