Chicken and Spinach Satay

Ingredients

  • Plain Chicken breast

  • 2-3 Handfulls of Spinach

  • 2 Scallions

  • 2tbsp peanut butter(unsweetened)

  • 2 cloves Garlic (minced)

  • 1 chilli - your choice

  • 1-2tsp Tumeric

  • 1tbsp Coconut oil

  • 1-2 tsp seseme oil




Method:

  1. Heat up the pan using about half of the coconut oil - I used a wok for this part but only because I didn’t have to clean big enough pans at my disposal

  2. Toss the Chicken in a bowl with tumeric and optional 1tsp of seseme oil while the wok gets hot - (I cut the chicken into strips) Stir fry until you’re happy that the chicken is fully cooked. - add in half the chilli and garlic

  3. Put the rest of your coconut oil, chilli and garlic in the other pan stir fry with your spring onions after a couple of minutes stir in your peanut butter, once its mixed in fully stir in the seseme oil and spinach and stir until spinach wilts! You’re ready to serve!
