Chicken and Spinach Satay
Ingredients
Plain Chicken breast
2-3 Handfulls of Spinach
2 Scallions
2tbsp peanut butter(unsweetened)
2 cloves Garlic (minced)
1 chilli - your choice
1-2tsp Tumeric
1tbsp Coconut oil
1-2 tsp seseme oil


Method:
Heat up the pan using about half of the coconut oil - I used a wok for this part but only because I didn’t have to clean big enough pans at my disposal
Toss the Chicken in a bowl with tumeric and optional 1tsp of seseme oil while the wok gets hot - (I cut the chicken into strips) Stir fry until you’re happy that the chicken is fully cooked. - add in half the chilli and garlic
Put the rest of your coconut oil, chilli and garlic in the other pan stir fry with your spring onions after a couple of minutes stir in your peanut butter, once its mixed in fully stir in the seseme oil and spinach and stir until spinach wilts! You’re ready to serve!
