Italian herbs and cheese bread

Ingredients: 

  • 1 Cup fine ground almond flour

  • 1/4 cup coconut flour  

  • 2 tsp baking powder  

  • 1 tsp Himilayan Pink salt  

  • 1/4 cup melted butter  

  • 1/4 cup finely grated Parmesan  

  • 12 eggs ( separated into yolks and whites) 

  • 1/4 teaspoon cream of tartar  

  • 1 teaspoon minced garlic  

  • 1 teaspoon rosemary  

  • 1 teaspoon oregano  

  • 1/2 teaspoon black pepper or rainbow peppercorns  

  • 1/2 teaspoon of chives  

  • Tbp of grated red cheddar  

You can leave out the cheese for a dairy free recipe (:  

Method: 

  1. Beat the egg whites and cream of tartar into stiff peaks ( best way to check it’s ready is to hold the bowl upside down.. if it doesn’t all fall out you’re good! 

  2. Mix all the dry ingredients (excluding red cheddar) in a food processor or mixer.. and then add in the the melted butter!  

  3. Fold the batter into your egg whites, 

  4. Place in a lined bread loaf tin  

  5. Bake for about 30mins  on 160c then sprinkle with rosemary and grated cheddar  - honestly use as much cheese as you’d like here! I like a decent covering over it but some prefer a more subtle cheese flavour! cover the gin down with tinfoil and bake for another 45 - 55 minutes 

  6. Youll know it’s cooked once the top becomes firm and doesn’t make any squishy noises when you press your hand to it.
