Italian herbs and cheese bread
1 Cup fine ground almond flour
1/4 cup coconut flour
2 tsp baking powder
1 tsp Himilayan Pink salt
1/4 cup melted butter
1/4 cup finely grated Parmesan
12 eggs ( separated into yolks and whites)
1/4 teaspoon cream of tartar
1 teaspoon minced garlic
1 teaspoon rosemary
1 teaspoon oregano
1/2 teaspoon black pepper or rainbow peppercorns
1/2 teaspoon of chives
Tbp of grated red cheddar
You can leave out the cheese for a dairy free recipe (:
Beat the egg whites and cream of tartar into stiff peaks ( best way to check it’s ready is to hold the bowl upside down.. if it doesn’t all fall out you’re good!
Mix all the dry ingredients (excluding red cheddar) in a food processor or mixer.. and then add in the the melted butter!
Fold the batter into your egg whites,
Place in a lined bread loaf tin
Bake for about 30mins on 160c then sprinkle with rosemary and grated cheddar - honestly use as much cheese as you’d like here! I like a decent covering over it but some prefer a more subtle cheese flavour! cover the gin down with tinfoil and bake for another 45 - 55 minutes
Youll know it’s cooked once the top becomes firm and doesn’t make any squishy noises when you press your hand to it.
