Keto Orange Chicken
Ever since my first trip to Panda Express in the states I've longed for a low carb orange chicken... My boyfriend looked at me a bit dubiously when I first said we needed a bottle of diet orange soda and yep it sounds odd. But it's the best source of sugar free orange flavour! This won't suit the die hard keto diet given the sweeteners that are generally in any diet soda. But for keto-goers that are just content to hit the right Macros this is perfect.
Ingredients (chicken) - feel free to use your own battered chicken here coconut isn't everybody's flavour. If using your own you can skip to the sauce part.
450g of chicken - I use breast but thigh would be more traditional
1.5 cup shredded coconut (unsweetened)
1 Cup almond flour
Tbsp olive oil
1tsp crushed chilli
Roughly Dice into cubes of chicken
Toss the chicken in olive oil
Whisk your eggs in a bowl
Mix the rest of your ingredients in a separate bowl
Dip your chicken in the eggs and then Into your dry mix
Place on a tray lined with Grease proof paper or a silicon mat
Bake in a pre-heated oven at 190c /375F for 20-25 minutes - make sure your chicken is cooked by cutting a piece open the centre should be completely white with no pink.
Macros (Chicken) - this recipe makes about 3-4 servings, Macros based on one serving.
Carbs (net) 3g
This Chicken can be used for anything! It's not limited to just orange chicken! Similarly the sauce is not limited to just this chicken so if you don't like coconut there are other batters out there! Normally I tend to go for batters like the ones on my onion rings or mushroom recipes but I didn't want to bring cheese into a Chinese style flavour. Anyway! Time to get at the sauce.
Ingredients (orange sauce)
Diet orange soda (I use club orange) 660ml
Soya sauce 2/3 cup
Sesame oil 1tsp
Garlic (ground or minced) 2tsp
Salt 1/4 tsp
Chilli Flakes 1/2 tsp
Orange zest 2tsp
Orange extract 1/2 tsp
Xanthan gum 1/2 tsp
Seseme seeds (to garnish)
(for a more personal Sized amount of sauce half these quantities)
Mix your soya sauce and soda in a saucepan and bring to the boil.
Boil for about 5 minutes before adding in all your seasonings (that's basically all the dry ingredients Except xanthan gum and Seseme seeds)
Simmer down for about 5 minutes
Take off heat to stir in xanthan gum - whisk this in very quickly to avoid clumping.
Put back on heat and simmer - stirring occasionally after 3-5 minutes add in chicken and stir until well mixed and chicken is Piping hot. The mix should thicken around it
Serve and sprinkle Seseme seeds to garnish
