Keto pizza

Another Fathead inspired recipe..

So Its the fathead dough again, and ill run through my two favourite topping combos for it. 

The Base Ingredients  

  • 165grams mozzarella

  • 36grams (Herb optional but preffered) softcheese

  • 40grams Coconut Flour

  • 1 egg

  • Seasonings of your choice - Himilayan Pink Salt, - I Dont like adding a lot of salt to my food the only reason I do use it is that salt draws the flavour out of the ingredients.

Seasoning Combos - pick a combo for whatever it is you're feeling - these are my two favourites

  • Italian - Oregano, thyme, rosemary, Basil, marjoram and garlic.

  • Vindaloo - Coriander, Cumin, Pepper, tumeric, cloves, cinnamon - all ground and  (2 red chillis cut fine),

The Base Method

  1. Put the Mozzarella, Coconut flour and soft cheese into a microwavable bowl and mix.

  2. Microwave for a little over a minute

  3. Mix around, put back in the microwave for another 30 secs

  4. Add the egg and seasoning to the bowl 

  5. Mix and fold well until the egg is no longer separated from the mixture.

  6. Rolling it out - this is the trickiest part of the entire recipe place it in a ball  between 2 pieces of baking parchment and roll into a circular pizza shape -  Remove the top sheet of baking parchment - sometimes when i get to this point i decide on mini pizzas,  (all you need is a cookie cutter and then follow on as normal (:

  7. In my eagerness to get it in the oven i nearly always forget to put some forkholes in the base - it does have a purpose, its what allows the base to cook evenly 

  8. I prefer to cook this on silicon mats - theyre cheap on amazon and reusable, so if you're using one you can flip the base onto the mat and peel off the baking parchment - alternativelty lift the base - with baking parchment onto a tray

  9. Cook at 220c for 12-15mins - you should get a nice golden brown on top.

  10. Take it out and flip it -apply toppings

Toppings - I can't tell you how to dress your pizza but these are my two favourites

  1. Sauce - Habanero pesto (recipe under sauces section in recipes) - Italian meatballs, pepperoni, mushrooms and cloves of roasted garlic, cheeses - Mozerella, gargonzola and parmesan

  2. Sauce - Carbonara with dollops of red pesto randomly throughout pizza (recipe under sauces section in recipes) -Mince meat (pre cooked), onion, Mozzerella and Parmasan cheese - I did this recipe with leftovers one day - imagine my surprise when it tasted like lasagne pizza 

The Grand Finale - once you've got your toppings decided on and added in  throw it back in the oven until the cheese melts/ cooks - normally 5-7 minutes at 220c

Macros: (Im only putting up macros for the base as your topping could change it ALOT. ) Servings per slice- splitting into a 6 slice pizza
