Lemon and blueberry bread
I love working on bread recipes, I suppose for most people they're the most missed thing in a low carb diet. I was never really one for sandwiches or just plain bread but I always had a soft spot for nice flavours and homemade bread
This one's great for celiacs and the lactose intolerant 😘 it's pretty high calorie but they're good Calories! And will keep you full!Â
Ingredients
3 cups/336g of almond flour
2 tbsp vanilla protein powder
1/2 tsp baking soda
1/2 tsp cream of tartar
6 Eggs
1 tbsp Stevia
Zest of 2 lemons
A dash of Himalayan pink salt
1 Cup of blueberries
1 tbsp coconut oil/butter
Method
Add the almond flour, protein powder, cream of tartar and baking soda to one bowl and mix
Mix the eggs, stevia, oil/butter, lemon zest and salt
Fold the Wet mix into your dry mix to form a batter
Line a bread tin with baking parchment and pour the mix into itÂ
Cook in a preheated oven at 180 Celsius for 50 minutes
Test its ready by pressing a knife down through it if it comes out dry you're good to go
Lift the grease proof paper at both ends of the bread tin and gently lift from the tinÂ
Let it cool down before peeling the paper off Â
Macros: I divide this into 12 good slices id say you could get as much as 20 out of it if you went thinner Macros are based on splitting the loaf into 12.Â
