Lemon Chicken (low carb + gluten free)
So as soon as I made orange chicken I decided lemon chicken was the immediate follow up! (Orange chicken recipe here btw)
And as much as I love orange chicken. I've always had a bigger place in my heart for lemon.. Frankly speaking I've a big place in my heart for all manner of Americanised Chinese food... So don't be surprised if the blog becomes clogged up with any array of general tsao and honey Seseme chicken...
Ingredients (chicken) - feel free to use your own battered chicken here coconut isn't everybody's flavour. If using your own you can skip to the sauce part.
450g of chicken - I use breast but thigh would be more traditional
1.5 cup shredded coconut (unsweetened)
1 Cup almond flour
Tbsp olive oil
2 Eggs
1/2tsp salt
1tsp crushed chilli
1tsp ginger
1.5tsp garlic
Method: (Chicken)
Roughly Dice into cubes of chicken
Toss the chicken in olive oil
Whisk your eggs in a bowl
Mix the rest of your ingredients in a separate bowl
Dip your chicken in the eggs and then Into your dry mix
Place on a tray lined with Grease proof paper or a silicon mat
Bake in a pre-heated oven at 190c /375F for 20-25 minutes - make sure your chicken is cooked by cutting Into a piece and making sure there is no pink visable
Ingredients: (Sauce)
• 330ml diet lemon soda
• 30ml honey
• 1/2 tsp ginger
• 3/4 tsp garlic
• 1/2 tsp chilli powder / to taste (I go hotter)
• 1 tsp Seseme oil
• 2-3 tsp Lemon zest
•2 tbsp cup soya sauce
•1/2 tsp Xanthan Gum
Seseme seeds to garnish

Method

Mix your soya sauce and soda in a saucepan and bring to the boil.
Add in the honey
Boil for about 5 minutes before adding in all your seasonings (that's basically all the dry ingredients Except xanthan gum and Seseme seeds)
Simmer down for about 7-10 minutes
Take off heat to stir in xanthan gum - whisk this in very quickly to avoid clumping.
Put back on heat and add in chicken stir until chicken is Piping hot and fully covered
Serve and garnish with Seseme seeds

It's not the lowest carb wise but we'll worth the 12g and much lower than your typical lemon chicken from a Chinese!
